Summer Strawberries with a simple Mascarpone Cream

Serves 2

Small punnet of strawberries, stock removed and halved

200g-mascarpone cheese

100ml single cream, whisked to soft peak

1 tablespoon of caster sugar

Best prepared 2 hours in advance of serving. 

Place prepared strawberries in a basin and gently toss. You may add a pinch or two of sugar at this stage if the fruit is not sweet enough for your liking. Tossing the strawberries will bruise them and so help the fruit macerate, providing you with a natural strawberry sauce. Set aside.

Gently beat mascarpone in a basin to a workable consistency. Fold in whipped cream. Add sugar to taste and then serve.
