St. Patrick's Day cupcakes


Celebrate St. Paddy's Day with some cupcakes



Ingredients

    * 1-1/4 cups 2% milk
    * 2/3 cup sugar
    * 1/2 cup canola oil
    * 2 eggs
    * 1 teaspoon vanilla extract
    * 1-3/4 cups all-purpose flour
    * 1 package (3.4 ounces) instant pistachio pudding mix
    * 2 teaspoons baking powder
    * 1/2 teaspoon salt
    * Green food coloring, optional
    * Cream cheese frosting

Directions

    * In a large bowl, beat the milk, sugar, oil and eggs until well blended. In a small bowl, combine the flour, cinnamon, baking powder, salt and baking soda; gradually beat into sugar mixture until blended.
    * Fill paper-lined muffin cups three-fourths full. Bake at 375° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Add food coloring to frosting if desired. Frost cupcakes. Yield: 1 dozen.

I made these and they were great. For the people who find the recipe confusing, follow the ingredients that are listed not the ones in the direction. Just omit the cinnamon and the baking soda.
Must be no one read the comments as there is no corrected recipe. It did sound interesting before mistakes became evident.
tried to make the cupcakes and found several mistakes. in the list of ingredients you have vanilla extract and pistachio pudding mix. in the directions those 2 items are never mentioned and you are told to mix in cinnamon and baking soda instead(where did they come from?)someone needs to correct this recipe and retransmit.
please correct your cupcake recipe - where does the pudding enter in? Also cinnamon you mentioned?
I think it's a gag. Cinnamon and pudding mix are out of directions.
instead of using individual ingred use white cake mix and put in the pudding in cake mix and use green food coloring. I think you will achieve the same outcome.
I do believe also that Jameson had a play in this recipe - I do not see cinnamon in the ingredients, but where does the pistachio pudding come in to play? Hurry, for the big day is right around the corner.
What about the baking soda? That wasn't listed in ingredients either...I agree, too much Jameson before typing causes recipe errors!!
I think someone was partaking in Jameson when they wrote this... when does the vanilla and pudding go into the mix? And like someone else pointed out, where'd the cinnamon come from? Electronic leprechauns perhaps?
Where did the cinnamon come from? and what do you do with the pistachio pudding mix??
I think someone missed a major mistake in this recipe. It calls for pistachio pudding mix in the ingredients but in the directions, there is no mention of when to add the pudding but instead mentions cinnamon, which is not listed in the ingredients.
