The absolutely perfect recipe for Irish coffee



Irish coffee was invented by Limerick chef Joseph Sheridan in 1942 to welcome Americans visiting Ireland. The travelers arrived in the west of Ireland on a cold winter night, so Sheridan added whiskey to their coffee to warm them up, telling the Americans they were being served Irish coffee.

A San Francisco Chronicle travel writer, Stanton Delaplane, brought the recipe back to the U.S. after drinking Irish coffee at Shannon Airport. It was first served at the Buena Vista Café in San Francisco on November 10, 1952.

IRISH COFFEE

Ingredients:

1 ½ oz. of Jameson Irish whiskey

5-7 oz. hot coffee or 2 shots of espresso

1-2 tsp. brown sugar

Fresh whipped cream

Method:

Run hot water slowly over a glass mug until it’s at room temperature or hotter, and then dry it (pouring hot coffee into a cold glass could cause it to crack)

Add brown sugar to mug

Pour in whiskey

Add coffee or espresso, leaving room at top for whipped cream

*To make cold Irish coffee chill the sweetened coffee before adding the whiskey

Stir until sugar is completely dissolved

Set whipped cream on drink

Do not stir (drink stays warmer longer with the cream sitting on top)

Aye, it's a good basic recipe, and as far as I know, the story is true. I've drunk Irish coffee at the Buena Vista Cafe myself. But, I learned an excellent improvement from a bartender in Montreal -- flaming Irish Coffee -- I don't recall the place or the name, so you can just call it Paddy Mac's Special Irish coffee -- start with a large glass shaped like a red wine or large white wine glass, one that can withstand the heat (don't use your wife's Waterford crystal!); then coat the rim with lemon juice; then dip the rim in white refined sugar; then pour the Jameson's in the glass; then get out some Sterno and light it; holding the glass at a 45 degree angle, move the bowl of the glass over the flaming Sterno, and slowly rotate the bowl of the glass by the stem with your fingers, being careful to not spill the whiskey into the flame; after a few minutes, carefully tip the edge of the glass toward the flame, until the flame jumps inside the glass, and burns with a light blue flame; pour the hot coffee in, add the brown sugar and stir, add the whipped cream, then add a touch of green Creme de Menthe, and a Maraschino cherry on top; and oh, turn down the lights while you are doing this and make sure your friends watch! Most bartenders will probably tell you it can't be done with Irish whiskey, unlike brandy and other liquors, but I've told you the secret, that was told to me in Montreal, and I've never seen anyone else do it. It's wonderful, and can't fail to impress your friends -- particularly if you do spill the whiskey into the flame, or the glass breaks -- so try it at your own risk, as they say. Paddy Mac
