"For me, nothing is quite as nostalgic as warm apple crumble. My childhood memories came flooding back to me when I baked this delicious dessert. Growing up it was one of my granny’s favorite desserts to make and a household staple!

In honor of St. Patrick’s Day, I decided to put a ‘naturalbornfeeder’ twist on my granny’s traditional recipe for all those who (like myself) lead a healthy lifestyle but don't want to miss out on the good things in life." - Roz.

This recipe is:

· Grain Free

· Paleo

· Gluten Free

· Refined Sugar Free

· And Dairy Free

Ingredients

12.5oz Ground Almonds

1 tbsp. baking powder (gluten free versions widely available)

5 eggs

5.5oz honey

2 Cooking Apples- peeled and sliced thinly

1 tsp. cinnamon ground

1 tsp. vanilla essence

Crumble Mix

2oz slivered almonds

2oz whole almonds with skin

1oz Irish rolled oat

1oz Kerry gold butter or coconut oil (for dairy free)

2 tbsp. honey or coconut palm sugar

Method

· Preheat the oven to 375ºF and prepare a round baking tin lined with parchment paper.

· In a large mixing bowl add in the ground almonds, baking powder and cinnamon.

· In a separate bowl whisk the eggs, honey and vanilla using a fork.

· Add wet mixture to your dry ingredients.

· Combine them well and stir in the sliced apples.

· Pour into your baking tin, smoothing the top evenly.

· For the crumble mix, using a pestle and mortar crush the whole almonds into quarters and halves.

· Place the crushed almonds, flaked almonds and oats in a mixing bowl.

· Heat the butter or coconut oil over a low heat with the honey (or place in the microwave for 40 seconds on high).

· Once melted, pour over the crumble mix and stir until the mixture is completely covered.

· Spoon evenly on top of your cake.

· Place in the oven for 60 minutes covering with tinfoil after the first 20 minutes to avoid the crumble looking over cooked.

· Leave aside to cool for 30 minutes, and enjoy!
