@anybody - For information Joseph (Joe) Sheridan, the barman who is mentioned in this article was born in fact in the town of Castlederg, county Tyrone in the province of Ulster and not in Munster, as suggested by the article. Small point maybe, but it pays to be accurate :)

When I bar tended at home in Dublin we whipped the fresh cream slightly. Just enough to allow it to pour off the back of the spoon and float on top of the coffee. Not heavily whipped, just enough to pour!! that is how I still make them today.
HAW! Finely, a reel IRISH COFFEE RECEIPT. Dara Kelly had a good one in need, Slainte!...Stiofain Gael Mac Geuogh, An "OLD" fashion barman (emphaisis on old)
