HOMEMADE BROWN SODA BREAD

Ingredients

2 cups all-purpose flour

2 cups whole wheat flour

1 1/2 teaspoons baking soda

3/4 teaspoon salt

2 cups low-fat buttermilk

Cooking spray

Directions

Preheat oven to 450F

Combine the flours, baking soda and salt in a large bowl. Mix thoroughly. Make a well in the center of mixture. Add buttermilk to flour mixture; stir until blended (dough will be sticky). Turn dough out onto a generously floured surface. Knead lightly 4 to 5 times. Shape dough into an 8-inch round loaf; place on a baking sheet coated with cooking spray.

Bake at 450 for 15 minutes. Reduce oven temperature to 400 and continue to bake for another 15 minutes, or until loaf sounds hollow when tapped underneath. Cool on a wire rack. Simple and delicious!

Healthy tip: To reduce calories simply use low-fat buttermilk instead of full-fat buttermilk

Why does the baked dough in the photograph have such an unhealthy blue tinge?
As an Aussie of Irish Descent. My ancesters came here, from Clare,Cork, and County Down in 1854.I am proud to say that I am a dab hand(very good)at making soda bread.I was given the reciepe by an Irish friend years ago,and hey presto,I made very nice bread, and yes I did put the cross in the top.I have also shown,Irish friends of my son,who were in their 20s,on holiday in Aussie how to make it.I have often made many loaves for Irish functions in my city. Its really tast toasted ,with thick butter and marmalade jam.
I might just try this. I had great Soda Bread last year baked by a women in Minnesota, USA last March, if you can believe that: From a little Finnish community in the heart of MN.

Last Step!!!! Don't forget to "CROSS" the dough on baking sheet!!! & also wrong procedure - after placing dough on baking sheet then place in oven - then & only then TURN on oven to 450 it will rise with the temperature rise then fully bake ( from Ann Garnsworthy, Ballinakill, Galway, IRL), It really works out beautifully
Love It!!!!
