We always had roast goose growing up in Dunmore, Co. Galway until turkeys became more fashionable. For the past two years I've cooked a goose for my family in NYC and we all love it. In fact, mine is in the oven right now, complete with wild rice and chestnut stuffing, and the smell is fabulous. The only thing missing will be turnips as I couldn't find any yellow ones and I don't bother with the white ones. Happy Christmas to all readers of the Irish Voice.
