Let's have a look at a few things that happened in January history. January 12th 1932 - Hattie W. Caraway becomes the first woman elected to the United States Senate. January 13th 1930 - The comic strip "Mickey Mouse" debuts in American newspapers. January 14th 1973 - The Miami Dolphins become the first professional football team to go undefeated for the season. They go on to win Super Bowl VII. January 15th 1922 - Sinn Fein leader Michael Collins becomes the first prime minister of the Irish Free State (now the Republic of Ireland) and forms a provisional government. January 16th 1919 - Prohibition, the legal ban on the manufacture and sale of intoxicating drink, goes into effect. January 18th 1778 - Captain James Cook discovers the "Sandwich Islands," which are later renamed the Hawaiian Islands. I guess we are making a Hawaiian Sandwich then! And no, it's not going to be Spam! This is a Dessert that we used to make years ago at Bobby Browns in Birmingham. I guess we called it Hawaiian as it had tropical fruit in it. This is simple to make so you can eat this with a Sweet white wine or semi-sweet champagne and pretend you are in Hawaii, if you aren't. HAWAIIAN SANDWICH Ingredients 2 Sheets frozen puff pastry, partially thawed Pineapple 2 Kiwi fruit 1 Passionfruit 1 Ripe mango cup Raspberries cup strawberries 1 Egg, beaten Sprinkle Caster sugar 3 Egg yolks 3oz cream 2 teaspoons Plain flour Method Preheat the oven to 400F. Line a baking sheet with greaseproof paper. Cut the pastry sheets in half and place them on the prepared baking sheet. Make a pattern of squares or diamonds with the back of a knife. Brush with the beaten egg and sprinkle over a little sugar. Bake in the bottom of the oven for approximately 20 mins until the pastry has puffed up and is golden. Cut the pastries in half lengthwise to make 4 bases and 4 tops. Peel the pineapple and the kiwi fruit. Cut the passionfruit in half. Cut the mango with a sharp knife on both sides of the flat stone; cut the fruit in pieces and remove the peel, and loosen the fruit from around the stone. Make a puree, in the food processor of 1 kiwi fruit, pineapple, mango half of the berries and the pulp of the passionfruit. Dice the remaining fruit. Strain the fruit puree, pour into a pan and bring to the boil. Meanwhile, mix together the egg yolks, sugar and flour. Beat in the warm fruit puree. Transfer to a pan and simmer for 10 mins, beating constantly. Set aside to cool. Whip the cream and mix into the cold fruit puree mixture. Stir in the diced fruit. Put the baked bases on individual serving plates. Add the fruit cream and cover with the square pastry tops. Sprinkle the top with icing sugar, if desired, and serve immediately. AND FINALLY... In English class in Honolulu, the teacher gave the class homework, using the words Chicken, Nut and Bread in a sentence.
